Rice puttu


Ingredients:
Rice flour – 1 cup
Water – ¼ cup
Salt – ¼ tsp or a pinch
Grated coconut – ¼ cup
Sugar – 1 tbsp
Cardamom powder – ¼ tsp
Method:
1)Take the rice flour in a bowl and add the water little by little to wet the flour .Then the flour will be of the consistency as shown in the below picture.
2) Sift the rice flour.
3) To the grated coconut add sugar and cardamom powder and mix well.
4) Layer the puttu maker with rice flour and coconut mixture.
5) Place the puttu maker on the top of the pressure cooker vent tube and steam for 4 to 5 minutes.
6)Remove the puttu from the puttu maker and serve it with grated coconut and banana.

Pickled Brinjal

Ingredients:
Brinjal pieces, cubed – 2 cup
Tomatoes, chopped – 2
Onion, chopped – 1
Ginger garlic paste – 1 tsp
Turmeric powder – ¼ tsp
Red chilly powder – ½ tsp
Coriander powder – 3 tsp
Garam masala – ½ tsp
Oil – 2 tbsp
Salt to taste
For Seasoning:
Nigella /onion seeds/Kalonji – ½ tsp
Fennel /Saunf – 1tsp
Mustard seeds – ½ tsp
Fenugreek seeds – ½ tsp
Hing /asafoetida – a pinch
Method:
1) Take the brinjal cubes in a bowl and sprinkle some salt and leave it for 15 minutes to sweat.
2) Squeeze out the water from the brinjal.
3) Heat some oil in a pan and add asafoetida, mustard, fennel, fenugreek seeds and kalonji seeds. Let the mustard seeds splutter and fenugreek seeds become brown.
4) Add chopped onion and cook till they are soft .Then add the ginger garlic paste and cook till the raw flavours of the paste disappears.
5) Add the chopped tomatoes and stir till they are soft.
6) Add the turmeric, red chilly, coriander powder and salt and mix well.
7) Add the brinjal and cook covered till they are soft. Serve with chopped coriander.

Spinach Masoor Dal(Red whole lentils)


This recipe is special as I have used the spinach which I had grown in a pot. Usually the greens are grown by seedling process.
I got little fresh spinach with roots from the greengrocer and I have chopped the stem and planted the roots in a pot. To my surprise it has grown well.
Ingredients:
Masoor dal/Red whole lentils – ¼ cup
Spinach -1 Bunch
Onion , small chopped – 1
Tomato, small chopped – 1
Garlic chopped -1 tsp
Green chilly , chopped – 1
Cumin seeds – 1 tsp
Turmeric powder – ¼ tsp
Chilly powder – ½ tsp
Coriander powder – 1 tsp
Dry mango powder – ¼ tsp (Optional)
Garam masala – ¼ tsp
Asafoetida – a pinch
Salt to taste
Coriander /cilantro leaves for garnishing.



Method:
1) Wash the lentils and put it in a pressure cooker along with Turmeric powder, Salt, Chopped Spinach for 4 whistles or until it is cooked. Switch off the flame and allow it to cool.
2) When the pressure drops, open the lid and mash the dal.
3) Heat oil in a pan, add cumin seeds, asafoetida, chopped garlic and onions. Cook till the onion turns pink.
4) Then add chopped green chillies and tomato and sauté well.
5) Add all the spice powders except garam masala and mix well.
6) Now add the dal and bring to boil then add the garam masala and cook for a minute.
7)Garnish with chopped coriander and serve with rice and chapati.

Watermelon curry


Ingredients:
Watermelon Cubes – 3 cups
Garlic flakes – 6
Zeera – ½ tsp
Ginger chopped – 1 tbsp
Dhaniya powder – ½ tsp
Red chilly powder – 1 tsp
 Turmeric powder – a pinch
Hing – a pinch
Lemon juice – 2 tsp
Oil – 1 tbsp
Salt to taste
Method:
1) Deseed the water melon cubes and make a puree of 1 ½ cups of watermelon cubes (middles portion) with garlic , salt and lemon juice.
2) In a microwave proof dish add Oil, Hing, Turmeric Powder, Ginger, Coriander powder, Red chilly powder .Microwave this for 2 minutes.
3) Add remaining water melon pieces and mix well.
4) Then add the Puree and microwave for 6 minutes. Remove from Microwave and mix well.
5) Garnish with coriander.

Dhaniya Rice



Ingredients:
Oil – 1 tbsp
Red chilly – 2
Mustard – 1 tsp
Urad Dal – 1 tsp
Cashew nut - 10
Onion chopped – 1
Tomato chopped – 1
Haldi Powder – ¼ tsp
Boiled Rice – 1 cup

For the Spice Powder:
Whole Dhaniya seeds – 2 tbsp
Red chilly – 5
Chana Dal – 1 tbsp
Urad Dal – 1 tbsp
Dry coconut  grated – 1 tbsp
Dry garam masala – Cinnamon stick -1 inch, Cloves – 2, Pepper corns - 2
Method:
1. Dry roast all the ingredients for the powder separately and coarsely ground it in a
2. In a pan heat oil and add mustard allow it to splutter.
3. Then add urad dal, Red chilly, cashew nut.
3. Add onions and sauté till slightly brown. Add the tomatoes and stir for 4 minutes.
4. Add 2 tbsp of the spice powder, haldi , salt and stir for 2 minutes.
5. Then add the boiled rice and mix well.

Curd Rice




Ingredients:
Boiled Rice – 1 cup
Milk – 1 cup
Curd – 2 tbsp
Salt to taste
Pomegranate seeds – 2tbsp
Coriander leaves – few only the leaf part
Method:
1) Heat the milk.When it is luke warm switch off the flame.
2) Mash the boiled rice. Use Hot boiled rice which can be easily mashed with spoon.
3) Add the milk to the mashed rice and mix gradually.Keep it aside for few minutes so that the rice attains room temperature.
4) Then add the salt and curd and mix. Then add the pomegranate seeds and coriander leaves.

Aloo Pasand

Ingredients:
Bread slices – 4
Boiled  & Grated potato – 1
Grated Carrot – 2 tbsp
Sugar – 1 tbsp (as per the taste)
Dry fruits chopped – 1 tsp
Ghee – 1 tsp
For the sugar syrup:
Sugar – 4 tbsp ( as per the taste)
Water - ½ cup
Cardamom Powder – 1 tsp
Oil for deep frying
Method:
1) Cut the edges of the bread. With a help of a round mould or lid cut the bread in to round shapes.
2) Deep fry the round slices till golden brown and place them on a tissue paper to remove excess oil.
3) For the filling, Heat 1 tsp ghee in a pan and add chopped Dry fruits.
4) Then add grated carrot and potato. Mix well then add 1 tbsp of sugar. Once sugar mixes with the potato mixture switch off the flame.
5) For the sugar syrup, in a pan add sugar and water. Once the syrup starts to boil add the cardamom powder and switch off the stove.
6) Dip 2 bread rounds in sugar syrup and sandwich the potato mixture in between the two slices.
7) Garnish with silver leaves and chopped pista .Serve chilled.

Fruit custard



Ingredients:
Apple, Grapes, Pineapple, Banana, Pomegranate, Kiwi – 1 cup chopped.
Milk – 1 cup
Custard Powder – 1 tbsp
Sugar – 2 tbsp
Cherries for garnishing
Method:
1) Mix custard powder in 2 tbsp of milk and keep this aside.
2) Heat milk in a pan and allow it to boil.
3) Then add the sugar, Stir in. Once the sugar dissolves add the custard powder mixture.
4) Continuously stir and when the milk thickens switch off the flame.
5) Allow it to cool and then refrigerate for 20 minutes.
6) Take the chopped fruits in a serving bowl and pour the custard mixture and serve.

Shahi Tukra/Double ka Meetha

Ingredients:
Bread Pieces – 6
Milk – 1 cup
Sugar – 3 tbsp
Milk Maid – 1 tbsp
Few Kesar strands dissolved in milk
Roasted and chopped dry fruits – 3 tbsp.
Butter – 2 tbsp.
Crushed Cardamom – 1 tsp
Method:
1)Cut the Bread slices Diagonally.
2) Apply butter on the bread and toast the bread on tawa. Toast both sides of the bread till golden brown.
3) Remove the bread slices and keep it aside. Heat the milk in a bowl .
4) When the milk starts to boil add the crushed cardamom .
5) Add the sugar and milkmaid. When the milk thickens remove the milk from flame.
6) Add the saffron strands and dry fruits. Allow it to cool for few minutes.
7) Arrange the toasted breads in a serving dish and pour the medium hot milk mixture on it.
8) Garnish with saffron strands and dry fruits. Serve Chilled.

Watermelon Apple Juice




Ingredients:
Water Melon – 1 ½ cups
Chopped Apples – ¼ cup
Sugar – 2 tsp
Pepper  - a  pinch
Salt – a pinch
Method:
1)Remove the seeds from the water melon  .Put it in a blender along with apple pieces and sugar.
2)Strain the juice through a large eyed mesh strainer.
3)Add salt and pepper to the juice and mix well.
4)Serve in a glass with chopped apples, ice cubes on top.

Chick Pea Dosa




Ingredients:
Chick Pea – ½ cup
Curd – 1 tsp
Grated Carrot – ½ cup
Chopped ginger – 1 tsp
Chopped Green chilly  – 1 tsp
Chopped Spinach – ½ cup
Chopped curry leaves -  1 tsp
Rice Flour – 2 tbsp
Baking soda – a pinch
Salt to taste
Oil for making dosa.
Method:
1) Clean the chick pea and soak overnight. Drain the water.
2) Put the chick pea in a blender and prepare a paste.
3) In a mixing bowl add the chick Pea paste, grated carrot, chopped spinach, Curry leaves, curd, rice flour , green chillies, salt, baking soda. Add little water and prepare a batter. Keep this batter aside for 15 minutes.
4) Pour a laddle full of batter into the non- stick tawa and make into a thick circle.
5) Close the non- stick pan with a lid and cook for few minutes.Then remove the lid and turn over .
6) Fry till golden brown.
7) Serve it with sambar or chutney.

Apple Jam



Ingredients:

Apples - 1
Sugar - 1/4 Cup
Lemon Juice -1 tbsp

Method:


1) Wash the apple, peel and chop it.
2) In a microwave safe bowl mix sugar and apple and Microwave it for  4 minutes.
3) Take the apple sugar mixture in a blender and blend it till soft.
4) Microwave this mixture a medium high (p – 60) for 7 minutes. Stir in between .
5) Add the lemon juice and mix.
6) Pour the jams in to the clean bottles and refrigerate.

Soya Flakes Bonda






Ingredients:
Soya Flakes – ¼ cup
Boiled ,Mashed Potato  - 1
Chopped onion – 1
Chopped chilly - 1
Chopped Curry leaves – 1 tbsp
Chilly Powder  - 1 tsp
Salt to taste
For Batter:
Gram flour or Besan – ½ cup
Baking Soda – a Pinch
Turmeric Powder – ¼ tsp
Chilly Powder  - ½ tsp
Salt to taste
Water as required to prepare a bajji batter.

Method:
1) In a bowl, Soak the soya flakes in water  for  5 minutes and drain. Squeeze the flakes.
2) Take the squeezed soya flakes in a mixing bowl and add mashed potato, chopped onions, chilly , curry leaves , chilly powder and salt.
3) Mix all the ingredients and make small balls. Keep it aside.
4) In another bowl, Prepare the batter by mixing gram flour , baking soda, turmeric powder,  chilly powder , salt  and water.
5) Dip the soya balls into the batter and deep fry in oil.
6) Serve it with chutney or tomato sauce.

Mushroom Masala

Ingredients:
Mushroom  -  1 ½ Cups
Onion – 1 chopped
Tomato – 1 c hopped
Ginger garlic Paste – 1 tsp
Oil – 1 tsp
Shahi  Zeera  - ½ tsp
Turmeric  Powder    ¼ tsp
Chilly Powder -  ½ tsp
Zeera Powder – ¼ tsp
Chat Masala – ¼ tsp
Garam Masala – ¼ tsp
Salt to taste
For  Garnishing
Coriander  -1 tbsp Chopped

Method:
1) Clean the mushroom and cut each mushroom into four pieces.
2) Heat oil in a pan and add zeera when it splutters add chopped onions and cook till soft.
3)Add ginger garlic paste and cook till it loses the raw flavour.
4)Add the chopped tomatoes and sauté for 4 minutes.
5)Then add all the dry ingredients except the garam masala.
6) Add the chopped mushroom and sauté.If the gravy is dry  add ½ cup water and cook for 5 minutes.
7)Once the mushroom is cooked add the garam masala powder.Saute for 2 minutes.
8)Garnish with coriander.

Almond Phirni



Ingredients:

Almonds - 10
Milk - 2 cups
Rice Flour - 3 tbsp
Cardamom - 3
Sugar - 3 tbsp
Few strands of kesar dissolve in Milk

Method:

1) Boil Milk in a heavy bottomed Vessel or non stick pan.

2) Add cardamom seeds to the Milk (Whole seeds give good taste).

3) Soak almonds in water, remove the skin ane prepare almond paste.

4) Genly mix Rice flour to the almond paste and prepare a smooth paste.

5) Add the mixed paste to the boiling milk and stir continuously.

6) Simmer it till the mixture is of creamy consistency.Then add Sugar.

7) When sugar dissolves add the kesar strands dissolved in milk.

8) Remove from fire and pour it in to serving cup and garnish it with almonds ,kesar strands,kis miss,Pista.Serve chilled.

Fruit Balls




Ingredients:

Bread  Slices- 4
Sugar - 3 tbsp
Milk - 1 Cup
Condensed Milk - 1 tbsp
Vanilla Essence - 1 tsp
Chopped Mixed Fruits - 1/2 Cup (Apple,Banana,grapes)

Method:

1) Cut the Edges of the Breads and keep it aside.

2) Heat Milk in a pan and bring it to boil.

3) Add sugar and condensed milk.

4) Remove the milk from flame and add vanilla essence.Allow it to cool.

5) Dip the bread slices in water for 2 seconds.

6) Place the wet slice between palms and press it gently to squeeze out the water.

7) Fill the bread slices with the chopped mixed fruits and make round balls.

8) Place the balls in a serving bowl and pour the milk mixture over it.

9) Garnish with Almonds & Serve chilled.
